Prawns with mooli and okra

Ingredients
3 raw shell on whole prawns
100g mooli
6 okra
50 g cooked pearl barley
3 large garlic cloves
1 banana shallot
1 large green chilli sliced
2tsp EVOO
Squeeze of Sriracha sauce
Method
Wash the prawns as pat them dry. Set aside.
Slice the mooli and set aside and peel the garlic cloves. Peel amd slice the shallots . Slice the chilli if not already done. Put all the vegetables aside.
Heat a frying pan with 1 tsp EVOO and when hot add the okra to blister on all sides - don't overcook.Remove from pan and set aside .
Add the second tsp EVOO andallow to heat before adding the mooli. Fry for a couple of minutes until it colours up slightly and then turn and repeat. Remove from pan and set aside with okra.
Add the garlic and shallot top the pan and fry for a few minutes to heat and soften. Stir occasionally to prevent sticking and when cooked set aside with the other vegetables.
Microwave the pearl barley until piping hot.( 2 minutes or so)
Now add the prawns to the pan and cook both sides until red all over and cooked . then set aside.
You are now ready to plate. Place the peal barey on hte palte and then the vegtables . Place the prawns on top and squeeze sriracha sauce over . Squeeze some lemon juice over and then add a couple of slices of lemon.

Observations
The okra should be fried dry so it may need some kitchen towel before it goes in. Too much water will make the okra go slimey. It is still edible but not as palatable.
The. iodea is to ser e the vegetables as al dente as possible. They don't have to be hot when served, that is a matter of taste so you may need to adjust the cooking order to achieve this more effectively.
