This is another one of those wonderful one-pot dishes involving rice that pop up now and then. This one, from Nigeria involves rice cooked in tomatoes. Generally meat free, it can just as easily include meat as this recipe includes beef.

Courgette Chutney

Continuing in my attempt to process the glut of overgrown courgettes that developed whilst we were away for a week I have already done pickle so next is chutney.

Courgette Pickle

I have not made chutney or pickle from courgette before but this year we had such a splendid display of plants and a glut of fruits that I had to give it a go. I used courgettes that had overgrown.

Lime Pickle

This is not your traditional 'leave them in the sun in salt to rot for a few weeks'. This is a quicker version that leaves the limes only a few days and then relies upon cooking to make up the time. Personally I prefer this one especially as I have replaced mustard oil with rape.

Caramelised Onion Chutney

Caramelised Onion Chutney is one of those sublime accompaniments to good cheese even though there isn't a gram of meat or animal produce involved. It is, as a dwarf might say, food fit for an elf (not always a compliment to the elf).

Mango Chutney

Mango chutney is a delight with curries and pretty good with cold meats or cheeses. This recipe uses ripe mangoes and you get the most delightful yellow colouration go compliment the wonderful taste.
